The extremely sweet active ingredient of the Katemfe fruit extract, Thaumatin, is 3,000 times sweeter than sucrose, making it the sweetest natural substance in the world. It was first introduced to the western world by a British army surgeon and botanist, William Freeman Daniell ( 1818-1865), who noted how native people were using the Katemfe Fruit to sweeten sour food and wine. He later reported the findings in the Pharmaceutical Journal.
A virtually zero-calorie sweetener because so little of it is required per use. It is impossible for the protein Thaumatin to ever spike blood sugar when metabolized, making it ideal for diabetics. Commercially, Thaumatin has been growing in popularity across Europe as a sweetener, but has only been used so far in the United States as an additive in the food industry. Thaumatin has been given GRAS (Generally Recognized As Safe) status as a food additive by the FDA and has no side effects.
